This course will assist students in identifying the environmental and dietary factors driving inflammation and the progression of chronic disease. We will examine the relationship between inflammation and blood sugar, and their effects on neurological health. Instruction will also include understanding the function of insulin, how to use the glycemic index and a glucometer, identifying useful lab markers, as well as practical dietary, herbal, and lifestyle interventions to manage inflammation.
